Yopo Mash
I was very hesitant about the yopo mash recipe when I first tried it a few years ago. To my great surprise, it was delicious. Now, it has become a family staple. This is enough to make eight full serving side dishes.

Ingredients
- 3lbs of Yukon Gold potatoes
- 2 tbsp of butter
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp paprika
- 12 oz or 1 1/3 cup of nonfat plain yogurt
- ¼ cup chopped chives
Method
- Wash potatoes well.
- Dice unpeeled potatoes into cubes (see the first picture for size.)
- Place potatoes in a medium sized boiler and cover with water.
- Boil until potatoes are fork tender.
- Drain well.
- Add butter, season, ¾ of chives and yogurt to the potatoes.
- Use a potato masher to combine ingredients and coarsely mash potatoes.
- Garnish with remaining chives.
- Serve!

Very nice Jo. Had some friends around who love my rissoles so I tried your recipe (couldn’t get Yukon Gold Potatoes) using some home-grown potatoes and everyone enjoyed it.
