Yukon Ranch Potato Salad with Crispy Bacon
This rustic potato salad has minimum ingredients, and maximum taste.

Ingredients
- 6-8 Large Yukon Gold Potatoes
- 8 slices of Crisp cooked Bacon, cut small and drained
- 3 Scallions, minced
- 1 small finely diced Red Onion
- 3 Celery Stalks, thinly sliced
- 3-4 large Radish, thinly sliced
- 1-1 1/2 cups Ranch Dressing
- 1/2 – 1 tsp Garlic Powder
- Salt and Fresh Cracked Black Pepper
- Minced Chives for garnish
Method
- Cut potatoes into bite size pieces and boil in salted water until fork tender. DO NOT REMOVE SKINS.
- Drain potatoes and put into a large bowl
- Add in all of the sliced vegetables and bacon then mix
- Add Ranch Dressing, salt, pepper, garlic powder and mix thoroughly
- Serve warm or refrigerate until cool
- Serve sprinkled with minced chives
