Yummy Roasted Potato Recipe

Recipe including potatoes, carrots, onions, and cabbage. It is really Yummy and VERY Easy.

This evening I was trying to decide what to have as our side dish to go with our Boston Butt.  I looked through the frig and found all I had was potatoes, onions, carrots and cabbage.  So here is what I threw together.

4 potatoes quartered

1 onion chopped

2 carrots (all I had, more would have been good) cut up

1/4 head of cabbage shredded

Olive Oil

garlic salt

black pepper

Italian seasonings

Well, I put the first 3 ingredients in a baking dish.  I seasoned the veggies with the listed seasonings to taste and then I drizzled the olive oil over the top and mixed them in well.  I placed them in a 350° oven for about 30 minutes or so until the potatoes were almost done.  Then I added the cabbage and touch more olive oil (mine was getting a little dry, if you don’t need it you don’t need it) and mixed well again and cooked another 30 minutes or so, just until cabbage was wilted but still slightly crisp. 

All I can say is YUMMY!!  My kids (15 and 10) loved it and asked for seconds.  My husband said this is a definite KEEPER!!  I hope you enjoy it!
