A 45 Minute or Less Meal
We at my house call this a “Lilithia special” because it’s something I do often enough when I have a meal to make, however am tired from the day. It is easy to make and can take around 45 minutes or less time depending on what you are working with. If you are diabetic, I suggests another recipe. Though for anyone on a budget this can help feed a large family and keep your cost down.
Ingredients
1 lbs ground beef (other meats can be used)
1 medium onion, chopped
3 cloves fresh garlic
1 can Cream of Mushroom
½ cup Milk
1 can corn
1 bag frozen veggies (any blend)
2 cup cheddar cheese
1 tablespoon olive oil
1 cup rice
3 cups water
Directions
In a 2 quart or larger pan, on medium-high heat, put in the olive oil, once heated add the chopped onion cook until just getting transparent. Now add the mixed veggies and cook until just becoming thawed, add garlic. Through the veggie mix into a bowl and set aside, in the pan add the meat and cook until browned, drain off fat, before adding water and bring to a boil, then add rice wait until it’s boiling again. After 5 minutes cover rice and turn off burner, wait another 5 minutes before coming back, when you lift the lid you should find that most of the water is gone when stirred. Turn the burner back on to medium, place back in the veggie mix, cream of mushroom soup, milk, and corn. Stir until slightly bubbling, turn off burn, adds cheese stir till combined and call the troops.
