Note: Use any inexpensive cut of lamb or mutton for authentic Irish Stew. It’s good for the slow cooker as well, but brown the meat first.

Ingredients:

  • 1 lb lamb or mutton, cut into pieces
  • 1 lb onions, sliced
  • 1 lb carrots, roughly chopped
  • 1 lb potatoes, peeled and cut into large chunks
  • salt and freshly-ground pepper to taste
  • pinch of thyme (and rosemary if desired)

Method:

Put lamb into a heavy saucepan with the thyme/rosemary. Add cold water to cover. Bring to a boil, cover and simmer for one hour.
Add the vegetables and season to taste. Cook until the vegetables are tender.

For additional flavour, brown the pieces of lamb in a little oil or butter before simmering.

Can be served with cabbage or Brussels sprouts and Irish soda bread to soak up the delicious sauce.

    This sounds perfect for St Patrick’s Day! Lamb is better than corned beef any day. And more Irish :)
