Note: Use any inexpensive cut of lamb or mutton for authentic Irish Stew. It’s good for the slow cooker as well, but brown the meat first.

Ingredients:

  • 1 lb/500 gm lamb or mutton, cut into pieces
  • 1 lb/500gm onions, sliced 
  • 1 lb/500 gm carrots, roughly chopped
  • 2 lb/1 kg potatoes (mixed floury and waxy types) peeled and cut into large chunks
  • salt and freshly-ground pepper to taste
  • pinch of thyme (and rosemary if desired)

Method:

Put lamb into a heavy saucepan with the thyme/rosemary. Add cold water to cover. Bring to a boil, cover and simmer for one hour.

Add the vegetables and season to taste. Cook until the vegetables are tender.

For additional flavour, brown the pieces of lamb in a little oil or butter before simmering, although it’s not always traditional..

Can be served with cabbage or Brussels sprouts and Irish soda bread to soak up the delicious sauce.
