Annie’s Chilled Cucumber Soup Made with Plain Yogurt

This is a very pretty and refreshing chilled soup for a hot summer night and it goes great with a sandwich or just toast points. I love it with grilled cheese.

ANNIE’S CHILLED CUCUMBER SOUP made with plain yogurt

To 2 cups of plain yogurt add and blend on high speed until smooth

4 small seedless cucumbers peeled and grated medium fine

3 Tbsp. milk (I use 2% but you can use whole or skim)

2 Tbsp. peppercorn ranch dressing

1 Tbsp. finely minced onion

1Tbsp. dill pickle chopped fine

1Tbsp. olive oil

2 cloves garlic minced

1/2  tsp. salt

1/2 tsp. lemon pepper

When smooth pour into individual soup cups and chill before serving

Garnish with a dab of plain yogurt, a twist of lemon and a sprig of parsley

Serve with toast points and sliced hard cheese or your favorite summer sandwich and a fruit dessert and this is a wonderful appetizer to serve with fish.

    Have to make this for my nephew, I think my sister told me he loves cucumbers and so do I so we have to make it for my mom and I, too!
