Asparagus Soup

ASPARAGUS SOUP-lip smacking recipe!

INGREDIENTS REQUIRED:

12 asparagus-cut off the white part.

50gm butter

1 medium size onion-finely chopped

1 slightly rounded tbsp plain flour

1 litre hot chicken stock(tip:vegetarians could use veg stock)

150ml(5 fl oz)double cream

salt to taste

freshly milled black pepper(to your taste)

METHOD OF PREPARATION:

-asparagus:cut away the white tough part.Reserve tips for garnishing.

 cut the rest into small pices(2.5cm length/1 inch)

-melt the butter in a large saucepan over gentle heat and cook the chopped onions for 5 minutes;keep the heat low.

-stir in the asparagus into the melted butter and onion and put lid on,let it sweat for 10 minutes,give it stir now and then.

-sprinkle 1tbsp flour,stir again to soak up the juices and add the hot chicken stock little at a time,stirring each time.

-when all the stock is in,bring it to boil and simmer.

- season with salt and pepper(to your taste) and keep the heat low and let the soup barely simmer,partially covered for 20-25 minutes.

- cool it and blend well in a blender in batches.(my husband loves the soup without being blend).

-taste to check seasoning.

-finally stir in the double cream and garnish with the asparagus tips.

Serving suggestions:

Serve either very hot or very cold,tastes good both ways.
