Bacon-wrapped Stuffed Shrimp

A delicious seafood entree

Ingredients
1 pound large (16-20) shrimp, peeled and deveined
1/4 cup breadcrumbs
1/2 white onion, finely chopped
1 stalk celery, finely chopped
3 Tbsp butter
1 egg, beaten
1/2 pound bacon, cut in half widthwise
16-20 wooden toothpicks
1 lemon, wedged into six portions

Directions
Beginning at the top and working toward the tail, split the shrimp halfway through lengthwise.
In a bowl, combine breadcrumbs, onion, celery, butter and egg.
With a teaspoon, divide breadcrumb combination into 16-20 equal portions.
Place a portion of stuffing into split on top of shrimp.
Wrap each stuffed shrimp with one of the bacon portions.
Secure bacon around shrimp with toothpick inserted through the shrimp.
Fry in deep fat until bacon crisps.
Drain on paper towel.
Serve with lemon wedges.
