Baked Potato Soup

Baked Potato Soup Recipe.

  • 2/3 cup butter or margarine

  • 2/3 cup all purpose flour

  • 7 Cups of Milk
  • 4 Large baked potatoes (cooked, peeled and cubed or shredded- about 4 cups)
  • 1 and 1/4 cups shredded cheddar cheese
  • 1 cup (8 oz) sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • In a large soup kettle or dutch oven, Melt the butter. Stir in the flour; heat and stir until smooth. Gradually add the milk, stirring constantly until thickened. Add potatoes and reduce heat. Simmer 10 minutes; add cheese (stir until melted); add remaining ingredients. Serve immediately. Enjoy
