Baked Potato Soup

This recipe is for a hearty baked potato soup that is sure to satisfy even the pickiest eater!

Baked Potato Soup

Ingredients:

- 3 bacon strips

- 1 small onion, chopped

- 1 clove of garlic, minced

- 3 tbsp all-purpose flour

- 1 tsp salt

- 1/2 tsp ground black pepper

- 1 tsp dried basil

- 3 cups of chicken broth

- 2 large baked potatoes – peeled and diced

- 1 cup half and half

- 1/2 tsp hot pepper sauce

- shredded Cheddar cheese to garnish

- minced fresh parsley to garnish

Directions:

1) In a large skillet, cook bacon until crisp. Drain all except 1 tablespoon of drippings. Crumble bacon and set aside.

2) Saute onion and garlic in reserved drippings until tender.

3) Stir in flour, salt, ground black pepper and basil. Mix well.

4) Gradually add broth and bring to a boil. Boil and stir for 2 minutes.

5) Add potatoes, half and half and hot pepper sauce.

6) Heat but do not boil.

7) Garnish with cheese, bacon and parsley.

8 ) Enjoy!
