Beef & Lentil Soup Recipe

This beef & lentil soup recipe is the perfect meal to serve your family. Whether it’s for lunch or dinner, beef and lentil soup is well rounded and makes an overall healthy healthy dish, that everyone will enjoy. Preparation is really simple and the cook time for this tasty soup is only about an hour and a half.

Ingredients

  • 11oz Red Lentils (Dried and Rinsed)
  • 8oz Stewing Beef (Cubed) 1 Leek Finely Chopped)
  • 3 Large Carrots (Finely Chopped)
  • 2 Celery Sticks (Finely Chopped)
  • 1 Tablespoon Vegetable Oil
  • 2 Onions (Finely Chopped)
  • 2 Tablespoons Plain Flour
  • 2fl oz Dry White Wine

Preparations

Start by bringing 1.8 litres of water to a boil in a large heavy saucepan. Then add the lentils, beef, leek, carrots and celery. Let the mixture return to a boil for a few minutes, then reduce the heat, cover the pan and simmer for about 40 minutes. Next remove the beef and let it drain on kitchen paper. In a frying pan cook the beef in oil over high heat until brown. When the frying pan is very hot, add the onions and sauté for about 15 minutes, stirring frequently.

While cooking sprinkle the flour over the onions and stir with a wooden spoon until the flour browns. Pour about 8fl oz of the lentil mixture over the onions and stir vigorously. Next add the white wine and cook for a further 1 minute. Combine the contents of the frying pan into the lentil mixture. Finish by allowing the mixture to simmer for 30 minutes before serving the final dish.
