Beef Noodle Soup

A delightful, simple recipe. Heavenly on a cold or rainy day. The recipe is for one bowl, but it can be adjusted to suit your needs.

BEEF NOODLE SOUP

Ingredients:

4-5 thin slices of raw beef tenderloin

4-5 slices of breast beef brisket, boiled and sliced

4-5 boiled meat balls

a handful of raw bean sprout

3-4 basil leaves

half a lime

 a few rings of thinly sliced onions

half a bowl of noodles of your choice

Method:

1. Prepare the broth in advance by boiling some beef or pork bones. Simmer for ideally 10 hours on low fire along with onions, ginger, star anise and cinnamon. The broth can be kept longer if frozen. When in a hurry, i just use the beef cube to make the broth but the taste is definitely not the same. Use the broth to boil the beef balls and brisket.

2. Boil the noodles and place in a bowl.

3. Place the boiled brisket and the raw tenderloin beef over the noodles.

4. Pour in the hot soup with beef balls.

5. Add as much vegetables as  you like.

If you prefer seafood, replace the meat with seafood. The broth can also be made using chicken bones.

4. Garnish the dish.
