Beer Pint Chicken
Perhaps one of the most lovely soups of all time. Second in a series of six on how to cook with beer.
Chicken soup has always been connected with health. Chicken soup has always been given to people when feeling ill or under the weather it has a property that many people think is close to penicillin. Below is a recipe guaranteed to pick you up the one and only Beer Chicken soup.
The secret ingredient
Required:
One old gnarled chicken (one to tough to roast)
six carrots
three celery stalks
2 large onions
I pint of Guinness
One handful of yellow beans
Half a handful of chick peas.
Salt and pepper to taste.
Large Saucepan
One French crusty loaf.
Method.
Place whole gnarled chicken in saucepan
Cover with hot water and bring to the boil.
simmer for 65 minutes or until meat drops from bones.
Take of heat and strain liquid into another large saucepan
Pour one pint of Guinness into liquid cover and let stand.
Separate chicken meat from bones (making sure to get rid of all bones)
Place all meat into saucepan with chicken liquid cover and let stand overnight.
A Gnarled Chicken
Following day:
Add the six chopped carrots,onions,celery,yellow beans,and chick peas adding salt & pepper to taste.
Bring to a fast boil and simmer for one hour and 30 minutes. (the first 30 minutes should be done partially covered).
Stir every 15 minutes.
While waiting for soup to thicken pour yourself a pint of Guinness and enjoy the wait.
When ready pour into bowls making sure you have plenty of meat and trimmings. Slice French Bread and cover with real butter.
