Bel’s Beef Stew

A delicious stew to be enjoyed on a cold winter evening.

Ingredients:
1lb Beef cubes
½ Onion – chopped
1 Can stewed Tomatoes with Garlic, Oregano and Basil
½ Packet Beef Stew Seasoning – *if no seasoning add 1 Cube Beef Stock instead*
4 Potatoes – chopped
2 cups Hot Water
*Chopped Spinach –optional*
Method:
- Brown Beef cubes in a little vegetable oil
- Add onions and fry with meat until onion pieces are ‘glassy’
- Add Stewed Tomato and chopped Potato- Stir
- Mix Beef stew mix with some water and add to meat mixture.
- Add* Spinach* and stir. (Any other vegetable/s may be added)
- Add the rest of the Water and stir
- Bring to the boil.
- Let simmer for 2hours, stirring occasionally. (in the event that the water evaporates simply add a ½ cup of water)
- Serve with cooked rice.

Beef provides us with a greater variety of cuts and more ways of cooking than any other meat. I love any sort of stew..hmm..I make a beef and sweet potato stew..yummy..garlic, cayenne pepper, thyme, marjoram. I will add this recipe to my collection Belle
