Bel’s Beef Stew

A delicious stew to be enjoyed on a cold winter evening.

Ingredients:

1lb Beef cubes

½ Onion – chopped

1 Can stewed Tomatoes with Garlic, Oregano and Basil

½ Packet Beef Stew Seasoning – *if no seasoning add 1 Cube Beef Stock instead*

4 Potatoes – chopped

2 cups Hot Water

*Chopped Spinach –optional*

 

 

Method:

  1. Brown Beef cubes in a little vegetable oil
  2. Add onions and fry with meat until onion pieces are ‘glassy’
  3. Add Stewed Tomato and  chopped Potato- Stir
  4. Mix Beef stew mix with some water and add to meat mixture.
  5. Add* Spinach* and stir. (Any other vegetable/s may be added)
  6. Add the rest of the Water and stir
  7. Bring to the boil.
  8. Let simmer for 2hours, stirring occasionally. (in the event that the water evaporates simply add a ½ cup of water)
  9. Serve with cooked rice.

    Beef provides us with a greater variety of cuts and more ways of cooking than any other meat. I love any sort of stew..hmm..I make a beef and sweet potato stew..yummy..garlic, cayenne pepper, thyme, marjoram. I will add this recipe to my collection Belle :-)
