Bel’s Vegetable Soup

A delicious homemade soup that the whole family will enjoy.

Ingredients:
1lb Beef cubes
1 Onion – grated
2 Tomatoes – grated
2 Beef Stock Cubes- dissolved in boiling water
4 Potatoes – grated
5 medium Carrots- grated
2 Turnips – grated
6 Green Onions- chopped
5 cups Hot Water.
Salt and Pepper to taste
Method:
- Brown Beef cubes in a little vegetable oil
- Add spring onions and stir.
- Add onions, tomatoes, potatoes, turnips, carrots.
- Add dissolved Beef stock and stir.
- Add 5 cups of hot Water.
- Bring to the boil.
- Let simmer for 2hours, stirring occasionally.
optional.
*Alphabet pasta may be added ½ hour before serving *
Serve with bread.

Hmm..I’ll give this a try Belle.. one of my favourite vegetable soups is cauliflower and cheese..yum!..I have cans upon cans upon packets upon packets of soup..nowhere near as good as the real mccoy home-made soup
