Broccoli, Cucumber & Dill Raw Soup

These soup ingredients are "classic" in Eastern European.
This Raw Soup with a creamy yogourt base is really refreshing in summer, but enough vitaminic to warm the body in winter!

Broccoli, Cucumber & Dill Soup

INGREDIENTS

- 1 Broccoli foot cut in little cubes

- 2 medium Cucumbers, peeled & seeled, you cut the cucumber in half and just scrape out the seeds with a teaspoon

- 2 or 2 1/2 cups plain yogourt, nonfat is better, use more or less as needed if the soup is too thick

- 1 or 2 cloves garlic minced

- 1 onion (or just the half) chopped small

- 3 tablespoon chopped fresh dill

- on taste add seasoning: salt, black pepper, 1 tablespoon lemon juice

METHOD

- Cut the broccoli and the cucumbers into little dices 1/4 inche

- Combine the broccoli dices, the cucumbers dices with yogourt, garlic, chopped onion, chopped dill, lemon juice, salt, black pepper, in a blender and blend till enough smooth.  * If the soup seems too thick add more yogourt. 

- Chill the soup in fridge until cold.  Check the Raw Soup seasoning add salt or pepper if needed & serve in bowls

- But, if you prefer the soup hot: warm it, just put in micro-wave or warm on the stove.  Taste to correct the seasoning & serve in bowls

- Giving 4 servings, eat with whole grains… crackers or bread!!  And, if you serve it with good cheese you get more Proteins for your day!
