Broccoli, Rice and Cheese Casserole
I have tasted many casseroles of this type, but I always come back to this one! I never have to tell the kids to eat their vegetables when I serve it.

Ingredients:
1 cup raw rice
2 packages frozen chopped broccoli
1 small onion, diced
1 can cream of mushroom soup
1/2 cup milk
1 pound Velveeta, cubed.
Cook rice according to package directions. Cook broccoli together with chopped onion until it is just starting to get tender (do not overcook as this will bake for a while as well). Drain.
In a large saucepan, mix together mushroom soup, 1/2 cup milk and Velveeta and stir over low heat until the Velveeta melts. Add rice. Stir well and pour into a greased casserole dish. Bake, uncovered, at 350 degrees until the top begins to lightly brown (about 15 minutes). Enjoy!
