Here is the perfect soup recipe for all those veggie lovers out there. This delicious cabbage soup is made with fresh cabbage, onions, potatoes, carrots and a mix of dried herbs. A simple vegetarian style soup that can be made in less then a half a hour and has a taste that is really refreshing.

Ingredients

  • 1 cabbage head (shredded)
  • 2 large onions (thinly sliced)
  • 2 carrots (thinly sliced)
  • 1 large potato (diced)
  • 1-1/4pt skimmed milk
  • 2 tablespoons low fat yogurt
  • 1 bay leaf
  • 1/2 teaspoon dill (dried)
  • 1/2 teaspoon rosemary (dried)

Preperation

Start by placing the cabbage, onions, carrots and potato in a heavy saucepan with a little water. Cover the mixture and cook slowly, until the vegetables are tender. Then add the milk, yogurt, bay leaf, dill and rosemary. Continue to cook for about 15 minutes and serve this cabbage soup hot.
