CAJUN BURGERS

Hamburgers, America’s favorite fast food, that and a stack of French fries with all the fixings is a meal that has become the heartbeat of the American cuisine; and we Americans know how to dress up a burger.  A burger may not be the healthiest meal we have ever set down to but they sure are good and unless you make a steady diet of them a tongue tantalizing burger every so often won’t hurt you.  I really enjoy a good burger, not every day but every now and then a good burger with fries and a salad and a tall, chilled beverage really hits the spot. 

One of my all time favorite burgers is the CAJUN BURGER, my son’s recipe for making them.  He can make one mean burger.  He does okay in the kitchen but the best place for him when it comes to food is at the grill.  When it comes to magic at the grill he does it up just fine and these burgers are really super good, the best.

Here is how to make them:

Begin with one pound ground beef (ground chuck 80% or better lean)

Place in a bowl with

1 clove garlic minced

1 small onion chopped fine

1 1/2 tsp. Cajun Seasoning

1/2 tsp. Tabasco sauce

1 tsp. salt

1/2 tsp. ground black pepper

Mix well to be sure all ingredients are well blended

Shape into 4 to 6 burgers and brush both sides of the burger with your favorite barbecue sauce and grill until well done (med. well to well.  The center should no longer be showing pink) These burgers do have some real zip and zing to them, they’re spicy but they are so delicious.

Serve on toasted hamburger buns topped with sautéed onions, green pepper and mushroom pieces, a slice of pepper jack cheese, and a slice of tomato on a bed of lettuce with corn or taco chips on the side and a dill pickle.  This burger is a meal in itself but goes awesome with potato salad, baked beans and con-on-the-cob the next time you are having friends over for a barbecue no matter what the season; a snow party barbecue can be just as much fun as a barbecue in the summer sun.
