Mango fool

 

Prep: 20 minutes

(Non including chilling time)

Makes: 6 servings

 

1kg ripe mangoes

½ cup sugar

1 cup milk

1 cup cream

 

1. Peel mangoes, remove seed. Dice the flesh of two mangoes and keep aside.

2. Purée the rest of the mangoes with milk and sugar. Blend in cream.

3. Transfer to a bowl and add the cubes of mango to it. Chill before serving.

 

Lemon pudding cake

 

Pep: 10 minutes

Cock: 45 minutes

Makes: 6 servings

 

1. Heat oven to 180 degree C (350 degree F)

2. Beat egg whites till stiff. Beat yolks slightly and add milk, rind and lemon juice. Beat in sugar and flour.

3. Fold in egg whites. Pour into an baking dish, place in a a larger bowl with hot water.

4. Bake the cake until golden (40-45 minutes). The cake will separate from a liquid while baking. Serve warm or chilled.

 

 

Lemon sorbet

 

Prep: 15 minutes

(Not including freezing time)

Makes: 3-4 servings.

 

About ½ cup lemon squash

½ cup lemon juice

175gm sugar

2 cups water

2 egg whites.

 

1. Dissolve sugar in water. Bring to a boil; boil uncovered for 12 minutes.

2. Blend the squash and juice into a bowl and pour it on the syrup. Allow this to get cold, then pour into shallow dish and freeze till it turns mushy (2-3 hours). Don’t allow it to harden.

3. Now whisk the egg white till thick and foamy but not dry. Fold into the syrupy mixture. Pour into a container, cover and return to freezer until firm (about 3 hours). Serve chilled.
