Carrot and Coriander Soup Recipe

Here is a sweet and tasty, carrot and coriander recipe. I love the taste of carrots, just as much as I coriander. It’s the perfect combination of flavors and I bet you have never had it before. Give it a try, in just under 45 minutes, you could be enjoying this fabulous carrot and coriander soup.
Ingredients
- 6oz Onion (Diced)
- 2oz Butter 1lb
- 2oz Carrots (Sliced)
- 1 Garlic Clove (Finely Chopped)
- 2pt Vegetable Stock
- 2 Teaspoons Caster Sugar
- 5fl oz Whipping Cream
- 2 Tablespoons Fresh Coriander Leaves (Chopped)
- Salt and Freshly Ground Black Pepper
Preperation
In a heavy saucepan, lightly cook the onion in the butter until soft and tender. Then add the carrots to the pan, and cook, stirring from time to time, for no more five minutes. Next add the garlic and vegetable stock. Season with salt and pepper and the sugar. Bring the mixture to aboil, reduce the heat and simmer for 30 minutes.
Finish by pouring the contents of the pan into a blender or food processor and purée. Pour combination back into a clean pan, and add the cream and coriander. Taste and adjust the seasoning, then heat the soup through gently, stirring. Serve hot with some warm bread and a glass of wine.
