Cheesy Potato Soup with Vegetables. A yummy fall time recipe.
Here’s my yummy Potato soup experiment I cooked yesterday and now it’s my meal for a little bit.
Cheesy Potato Soup with Vegetables
Save 5-6 cups of potato soup stock with about 1-1/2 cups of diced cooked potatoes (more if you want)
You would need to cook mashed potatoes for a previous meal first and save your liquid and potatoes.
1 lrg container of chicken broth (use half of container)
cook up some frozen spinach and save the juice.
I cooked my spinach with a little bit of parmesean cheese, salt & pepper and sprinkling of lemon Pepper spice
Add about 1 cup of the spinach liquid to potato soup and maybe about three to four scoops of the spinach. I didn’t
want to add a lot of the spinach to my soup so I had the remainder of the spinach for a separate meal.
Chop up about 4 stalks of celery
1 can of cream of celery
salt & pepper to taste.
3/4 to 1 cup of parmesean cheese
2 tbsps butter or margarine
3 tbsps marinara sauce
Mix it all together and heat up. The soup has a good flavor.
Just to add a funny little story with this. I was cooking this last night and I had shown one of my daughters my bowl of spinach that I was eating. She took one look and got kind of disgusted and asked me what it tasted like. I told her it was good. I also told her how I hated it as a kid. I don’t think my Mom added anything to it and it probably had a bitter taste for me back then.
Then my oldest comes up to cook his supper. While he’s getting his ready, I started talking about how he used to be so picky and now he eats hamburgers and all kinds of other things. Well, he looks over to my meal and says, “But I still wouldn’t eat that.’ Ha ha.
Then I went on to say that Mom tends to like practically anything and I told them that their dad used to always be a good sport and at least try the things I cooked. When we were married and he worked all day, he never knew what he was going to come home to find cooking on the stove.
He would sometimes come in and say, “What’s that?”

This sounds good, I\’ll have to give it a try. I like all of the ingredients.
