Cheesy Spinach Dip

Ingredients

8 ounces part-skim milk ricotta
8 ounces low-cal cottage cheese
2 tablespoons lemon juice
2 tablespoons purple onion, minced
1 10-ounce package fresh frozen spinach, chopped and drained
¼ teaspoon paprika
¼ teaspoon garlic powder

Procedure

Combine the first 3 ingredients in a food processor, and blend until smooth.

Fold the cheese mixture into a mixing bowl. Add the paprika, garlic powder, and minced onion.

Unthaw and drain the frozen package of chopped spinach, and add to the cheese mixture.

Fold together and serve with vegetable “dippers.” Serves 16.
