Chicken and Pasta Italian Style
Italian style food is great. Almost everyone enjoys it. This recipe is easy and delicious.
Italian food is very popular with many people. This chicken and pasta dish is easy to make and delicious.
¼ pound sliced bacon, chopped
4 cloves garlic, minced
¾ pound skinned, boned chicken breast cut in i4/ inch wide strips
4 medium size tomatoes, seeded and chopped
½ cup dry sherry or chicken broth
1 tablespoon Italian seasoning or ¼ teaspoon each dry basil, oregano, thyme and marjoram
1/8 teaspoon cayenne pepper
6 ounces spaghetti
½ cup grated Parmesan cheese
In a wide frying pan, cook bacon over medium heat until crisp. Lift out, drain and set aside. Discard all but 2 tablespoons of the drippings.
Add garlic and chicken to pan and cook over high heat stirring until meat is lightly browned (about 3 minutes). Remove chicken from pan and set aside.
Add tomatoes, sherry, Italian seasoning and cayenne pepper to pan, boil over high heat until most of the liquid has evaporated (about 10 minutes).
Meanwhile in a 4 to 5 quart pan bring 2 quarts of water to a boil add spaghetti and let the water return to a boil and cook (10 to 12 minutes).
Return chicken to tomato mixture, stir until heated through. Drain spaghetti and arrange on a warm platter. Spoon chicken mixture over the spaghetti and sprinkle with crumbled bacon. Use cheese to taste. Will make 2 servings. This dish is great served with warm French bread.
