Chicken And Vegetable Soup – Homemade. A healthy, hearty chicken and vegetable soup, made with chicken fillets, potatoes, onions, peas and carrots.

Chicken fillets.
This is my recipe for a Chicken And Vegetable Soup, the ingredients and preparation is listed below:
2 chicken fillets – (cut into bite size pieces),
5 to 6 medium sized potatoes – (washed, peeled and cut into bite size pieces),
2 small onions – (Peeled and chopped finely),
1 x regular tin of green peas, (or homegrown),
1 x regular tin of carrots, (or homegrown),
chicken stock cubes, (I use the brand Knorrs),

Vegetables.
After the above preparations have been completed regarding the ingredients, I cook my chicken in a frying pan with a little olive oil, just until the chicken has turned white, not too much otherwise it will be too tough. If you wish you can boil your chicken instead.
I boil my potatoes in a saucepan, with a little salt, until they are nice and soft, I test using a knife to make sure that they are.
I then add my chicken and potatoes into a clean saucepan of boiling water, and add my chopped onions, peas and carrots, chicken stock cubes, (I find four cubes are usually suffice), and a little salt and pepper for taste.
I normally have my soup cooking for 10 to 15 minutes, and then leave to cool slightly. Then enjoy with a few slices of thick bread and butter.

Chris whats going on today I have read at least 5 great recipes your s makes six. Stupid time for me to start a diet sounds great really enjoyed it I think I will go and eat now..

Chris, Generally, I boil chicken. But I like your tip on the slight whitening and your use of olive oil. Do you use black or white pepper or both? Delicious with butter-slathered thick bread!
