Chilled Cucumber Soup
This chilled cucumber soup is a refreshing delight. The delicious flavor of fresh cucumbers in a succulent vegetable stock is extraordinary.

Chilled cucumber soup has the perfect combination of veggie flavors. This delicious vegetarian soup is really easy to prepare and it has a rich, creamy texture and sublime taste that is stupendous. This cucumber soup recipe should only take a half and hour to make and about another hour to chill.
Ingredients
- 1 Onion (Diced)
- 2oz Butter
- 1lb 4oz Cucumber (Diced)
- 3pt Vegetable Stock
- 2 Tablespoons fresh Parsley (Chopped)
- Juice of 1/2 Lemon
- 1pt Single Cream
- Salt and Freshly Ground Black Pepper
Preparation
In a large saucepan, lightly cook the onion in butter, until soft and translucent, but not colored. Then add the cucumber and continue to cool gently for a further five minutes. Next pour in the vegetable stock and bring to a boil.
Reduce the heat, season with salt and pepper, and simmer for another five minutes. Then add the parsley and lemon juice, and continue to cook for a further five minutes. Blend or process the soup into a puree. Allow the mixture to cool, then transfer to the refrigerator and chill for one hour. When ready to serve, whisk in the single cream and enjoy
