Cold Buster Chicken Soup

This recipe will get rid of even the toughest colds. All the ingredients are out of a can, carton, or the freezer because I wanted a quick and easy homemade soup that would do the job. There is something about colds that puts everyone in a bad mood. It seems whenever I make this; I am the one who is sick so I don’t want to spend hours cooking the cure for the common cold.

This spicy chicken soup is good even if nobody is sick.

2-3 boneless chicken breasts, thawed but uncooked

1  32oz carton vegetable broth

1  32oz carton chicken broth

1  14oz can diced stewed tomatoes

1  10 oz can diced tomatoes with green chillies

1  1lb bag frozen mixed vegetables

Cut chicken breast into bite size pieces.  Put everything in a large pot or Dutch oven.  Cover and bring to boil over High heat.  Stir occasionally.  Turn heat to low.  Cover and simmer for 1 hour.  Stir occasionally.  Ladle into a large bowl.  It will be much too hot to eat, but have the cold sufferer breathe in the steam.  Eat soup as hot as can be tolerated. Reheat additional bowls throughout the day, if appetite allows.  Do the same the following day.  Cold should be gone by the third morning.

    If this doesn’t help get rid of your cold, nothing will. This is very tasty and one of my favorite soups created by Terri.
