Cold Winter’s Day Corn Chowder

A nice, tummy-warming, thick soup for those cold winter days. We eat this in summer too, to show how much we love it!

         

                          

  When the wind is howling outside your kitchen window and all the kitties are hunkered down in the garden hay keeping warm, we can be very grateful that we have our cozy kitchen to take comfort in. A lot of us browse through our cookbooks, sipping a nice hot cup of tea, trying to find a nice warming dinner for our families who are at work or school. Corn chowder is just one of these comfort foods. This recipe is easy to make and it goes a long way!

  1/2 block real butter-(here is where I am related to Paula Deen!)

  2 slices of bacon, diced

  1 yellow onion, chopped

  2 cloves garlic, minced

  3-4 ribs of celery, sliced, but not too thin

  Saute’ this until all are wilted and bacon is lightly browned. Add to this:

  6-8 potatoes, peeled and diced

  1 can chicken broth

  and enough water to cover the potatoes and simmer until just tender. Add to this:

  2 cans cream corn

  1 can corn niblets

  1 large can mushroom soup                                           

  salt and pepper to taste                                                   

  1 can evaporated milk or heavy cream                   

  1 cup grated cheddar cheese

  Gently simmer until all are blended and cheese is melted and dispersed, stir. Do not boil as milks will change consistency. If soup is too thick, add a bit of milk or water and if you get it too thin-you can add mashed potato flakes to thicken it up. This is one soup that can go either way sometimes.

  Garnish with:

  Chopped green onion, crumbled bacon and cheddar cheese. Set these three garnish bowls next to the soup tureen. Chowder may be accompanied with oyster crackers, fresh dinner rolls, cornbread muffins or garlic bread.

    Wow! Sounds yummy. I really appreciate all your easy recipes. I will be able to really impress my husband with this Corn Chowder – he will think I have been in the kitchen all day cooking this wonderful soup. LOL!

    Thank you so much for coming by to read. Like I told Jane, this is a tried and tested recipe and I would love coming home from school to see a pot of it on the stove, only bested by Mama’s apple pie that I never got the hang of making crust like her.
