Comforting Chilli Con Carne
One way to spice up those cold winter evenings…
Serves: 6 To Prepare: 30 mins
Ingredients:
Oil for Frying
2 large onions
1 carrot
3 celery sticks
800g minced beef
1 tsp cumin
1 tsp hot chilli powder (adjust to taste)
1 tsp dried oregano
1 red chilli
Dash of red wine
2 cans of chopped or plum tomatoes
1 can of kidney beans, drained and washed
1-2 beef oxo cubes (or 300ml of any beef stock)

- Brown your mince in a frying pan with the oil and onions until thoroughly cooked
- Add the rest of the ingredients and simmer gently for around 30-40 minutes.
This recipe works particularly well if you have a slow cooker. Once you’ve fried your beef and onions, you can place all your ingredients in the slow cooker together and cook on high for 3-4 hours or medium for 6-8 hours. This is the best way to cook it as it tenderises the meat beautifully!
You can serve in the usual way with a mountain of rice or place in a bowl and top with creme fraiche or greek yogurt. I love mine with pitta bread.

Great recipe, we make something similar, I must try it with celery and oregano. In my view, best eaten with warm pita bread and a large jug of ale!!

This is slightly different to my recipe, love the idea of the celery and oregano. I must admit yours does sound absolutely yummy. I think I will try a ‘chilli off’ and give yours a go!
