Corn Basil and Fusili Soup

A delicately flavored pasta and corn soup… Must give a try and I bet you gonna love it!

Ingredients:

  • 1 Onion – chopped
  • 2 cloves garlic – chopped
  • 3/4th cup of cream style corn
  • 10 basil leaves – chopped
  • 1/3rd cup fusili (pasta)
  • 1 tsp olive or or any other oil of your choice
  • 2 tbsp tomato puree
  • Salt and pepper to taste
  • 2 tbsp grated cheese for garnishing

Method:

  • Heat the oil in a pan and saute the onion and garlic for 2 minutes.
  • Add the cream style corn, basil, tomato puree, fusili and 3 cups of water and boil until the fusili is cooked.
  • Add the salt and pepper and mix well.
  • Garnish with cheese and basil leaves and serve hot!

    Not a garlic and onion person but I am sure that I can find substitites.
