Cream of Chicken Soup

Ingredients

  • 125 grams chicken with bones cut into 2-3 pieces
  • 1 bay leaf
  • ¾ teaspoon salt or to taste
  • 1½ tablespoons butter
  • 2 tablespoons plain flour
  • 1 cup milk
  • ½ teaspoon freshly ground pepper

To Serve

  • 2 tablespoons cream
  • Some chopped parsley or greens of spring onion

Method

  1. For stock, microwave covered 3½ cups water, chicken, bay leaf and salt for 8 minutes. Strain the stock through a fine strainer to get a clear stock. Remove bones from chicken pieces. Keep shredded chicken and clear stock aside.
  2. Microwave butter in a dish for ½ minute.
  3. Add flour. Microwave for 1 minute. Stir well.
  4. Add milk, stock, pepper, salt, shredded chicken, mix very well. Microwave covered for 3 minutes or till it comes to boil. Uncover and microwave for 2 minutes.
  5. Pour into soup bowls. Serve garnished with greens and 1 teaspoon of cream.
