Cream of Chicken Soup

Ingredients
- 125 grams chicken with bones cut into 2-3 pieces
- 1 bay leaf
- ¾ teaspoon salt or to taste
- 1½ tablespoons butter
- 2 tablespoons plain flour
- 1 cup milk
- ½ teaspoon freshly ground pepper
To Serve
- 2 tablespoons cream
- Some chopped parsley or greens of spring onion
Method
- For stock, microwave covered 3½ cups water, chicken, bay leaf and salt for 8 minutes. Strain the stock through a fine strainer to get a clear stock. Remove bones from chicken pieces. Keep shredded chicken and clear stock aside.
- Microwave butter in a dish for ½ minute.
- Add flour. Microwave for 1 minute. Stir well.
- Add milk, stock, pepper, salt, shredded chicken, mix very well. Microwave covered for 3 minutes or till it comes to boil. Uncover and microwave for 2 minutes.
- Pour into soup bowls. Serve garnished with greens and 1 teaspoon of cream.
