Cream of Pumpkin

Preparing cream of pumpkin.

Ingredients

· 1.2 kg pumpkin

· 1 onion

· 1 liter of vegetable broth

· Lemon juice

· Butter

· Ground pepper

· Salt

First peel the pumpkin, remove seeds and cut into small pieces.

Then peel and chop the onion very thin, while two tablespoons melted butter in a large pot. We took the onion,clean it a bit and add the pumpkin along with the broth.

We plugged the container and wait till it boils. We went over a low heat / medium and cook for 19 to 15 minutes, until tender squash. Then grind it all without removing the pot and seasoned with salt, pepper and a little lemon.

    Surely, there are no pumpkins around… But I guess I’ll try this recipe with a squash…
