Creamy Mushroom Soup Recipe

A simple and quick delicious mushroom soup. (Serves 2)
Ingredients:
- 1 red onion – chopped
- 1/2 head celery – chopped
- 4 porabello mushrooms – chopped
- 250 g closed cup mushrooms – chopped
- 4 tbsp soured cream
- 1 vegetable stock cube
- 1 tsp garlic granules
- (1 beef stock cube or 1 chicken stock cube – for the non vegetarians!)
- Water
- Oil
- Knob of butter (optional)
Equipment:
- Chopping board
- Sharp knife
- Saucepan
- Stirring spoon
- Hand blender / liquidiser
Mehod:
- Chop the ingredients as above
- Sweat the onions and celery in the oil, with a little butter if you desire
- Add in the mushrooms and fry these off a little – 5 mins max!
- Pour over water to cover, add the stock cubes
- Simmer until the celery and onions are soft
- Allow to cool
- Liquidise either in a blender or with a hand blender
- Reheat and add in the soured cream – stir
Serve with crusty bread and a sprinkling of parsley.
