Crockpot Meals! Mushroom & Veal Roast
Here is a yummy crockpot recipe at a time we are all craving comfort food and bringing our crockpots out.

2 ounce dried porcini mushrooms
1 cup water
32 ounces chicken broth
6 Tablespoons dried cherry
4 packets cream of mushroom soup mix
1 pound button mushrooms coarsley chopped
2 red bell peppers coarsley chopped
2 leeks trimmed and coarsley chopped
4 pounds veal shoulder roast
Place the mushrooms in a bowl with 1 cup of room temperature water for 20 minutes, or until they are soft. Pour off the excess water and then mix the mushrooms with the soup mix, sherry and chicken broth. Add the roast to the slow cooker and then pour in the mushroom mixture, then add in the leeks on top of the mixture . Cook roast 9 hours on low or 5 hours on high.
