Cuban Black Bean Soup
Black bean soup with lot of ingredients. Enjoy.
1 1/2 tablespoons olive oil

1 tablespoon fresh cilantro chopped
1/2 cup each green bell pepper and onion, chopped

5 oz. rinsed and picked over uncooked black turtle beans
1/2 teaspoon each salt, oregano leaves and ground cumin
1 oz. Canadian bacon diced
4 garlic cloves, minced
1 tablespoon red wine vinegar
1 1/2 quarts water
2 packets instant chicken broth and seasoning mix
1 teaspoon ground red pepper
4 tablespoons sour cream
Method: Heat oil in large saucepan. Add onion, bell pepper, bacon, cilantro, and garlic. Saute’ until vegetables are softened; add vinegar and saute’ one minute longer. Add remaining ingredients (eacept sour cream) and bring to a boil. Reduce heat, simmering until beans are tender, about one hour. Let soup cool slightly. Divide soup in half. In blender at low speed, process two cups of soup at a time until half the soup is pured. Return to saucepan containing remaing soup and cook, stirring occasionally, until combined and heated. Serve, topped with sour cream. Garnish with additional cilantro leaves.
