Czarnia (Duck Blood Soup)

This recipe has been passed down from generation to generation on my dads side of the family. This is the best soup I have ever had.

Ingredients

  • 5 ounces distilled vinegar
  • 1 cup duck blood (pigs blood can be substituted)
  • 10 cups of water
  • 8 or 9 beets, cut in long strips
  • (summer beets cook 1/2 hour, winter beets cook 1-1/2 hours)
  • 1 crushed onion
  • salt and pepper to taste
  • cumber seasoning
  • 1 duck cut up

Method

  1. cook until beets and duck are tender
  2. add duck blood (or pigs blood) to the soup
  3. simmer another 10 to 15 minutes
