Czarnia (Duck Blood Soup)
This recipe has been passed down from generation to generation on my dads side of the family. This is the best soup I have ever had.
Ingredients
- 5 ounces distilled vinegar
- 1 cup duck blood (pigs blood can be substituted)
- 10 cups of water
- 8 or 9 beets, cut in long strips
- (summer beets cook 1/2 hour, winter beets cook 1-1/2 hours)
- 1 crushed onion
- salt and pepper to taste
- cumber seasoning
- 1 duck cut up
Method
- cook until beets and duck are tender
- add duck blood (or pigs blood) to the soup
- simmer another 10 to 15 minutes
