Delicious French Onion Soup Recipe
A delicious French onion soup with cheesy croutons – a favourite of mine and a hit with my partner when I make it for her.
40g unsalted butter
3 tablespoons olive oil or vegetable oil
750g onions, chopped
1½ tablespoons white or brown sugar
5 tablespoons of French brandy
250ml red wine
1½ litres beef stock
2 bay leaves
2 slices extra-thick sliced white bread
50g grated Gruyere cheese

Take a large soup pan (ideally non-stick coated) and gently heat the butter and oil to melt. Add the chopped onions and stir to coat well with the melted butter. Sauté or fry over a medium-low heat for 20 minutes so that the onions cook to golden translucency without browning.
Add sugar and stir. Fry gently for another 20 minutes until onions caramelise and turn a rich brown.
Add the brandy, wine, beef stock and bay leaves. Bring to the boil. Simmer for 20 minutes.
Whilst the soup is simmering, slice the bread into squares of around 1cm each side. Grate the cheese. Heat the bread squares gently under the grill until the surface becomes slightly crisp without browning more than a little.
When the soup has finished simmering, serve into bowls, removing the bay leaves. Add a handful of the bread croutons to the top of each bowl then sprinkle over with the grated cheese so that it melts onto the croutons.
Serve, with what’s left of the red wine bottle!
