Delicious Jamaican Recipes: Curried Chicken

Curry chicken can be prepared depending on personal taste. For more tasty results, curry chicken is seasoned from over night so that the seasoning can be “soaked” in the chicken. 

Ingredients:

  • Chopped Onions
  • Curry Powder
  • Chopped Chicken Parts
  • Vegetable Oil (when cooking)
  • Green Peppers (chopped)
  • 2 Potatoes
  • Garlic (minced)
  • Green Onions
  • Bowl with a cover (to hold the chopped chicken in the freezer)
  • Red Bell Peppers (optional)
  • Salt 
  • Black Pepper
  • Tomatoes (chopped) 
  • Two table spoons of Grace Jerk Seasoning (optional)
  • Carrots

Directions: Seasoning The Chicken

Blend the chopped onionsgreen peppers, garlic, and tomatoes for about 5 seconds. Place your chopped chicken parts in the bowl. Pour the blended vegetables on the chopped chicken parts. Now sprinkle the chopped chicken with curry powder and black pepper. Add the optional choices as well if necessary. Close the bowl with your cover. Firmly grip the bowl by the closed section where the cover of the bowl is. Shake the bowl up and down until the seasoning is thoroughly mixed with the chopped chicken. Place in refrigerator over night.

Cooking Directions

Take out the chicken from early in the morning, so that the excessive ice can melt away. Place a large enough pot on the stove so all the chicken can be contained in it. Pour a moderate amount of vegetable oil in the pot and turn the stove on medium. Place the chops of chicken in the pot, one piece at a time (not including the the vegetables in the bowl). Let the chops of chicken sauté, make sure to always monitor them. Once you let the chops of chicken sauté, you cut up your potatoes into slices, and place them into the pot. Using the bowl with the vegetables in it, pour a little water in it. Now pour the water with the vegetables in the pot. Cut up carrots and place into the pot. Let the chops of chicken cook until they are brown, Curried Chicken is now ready to be served. This dish is usually served with rice or dumplings in Jamaica, but feel free to serve it with the food of your choice!
