Easy Beef-vegetable Soup

A very easy soup to make that is perfect for frosty fall and winter evenings.

Ingredients:

  • 2 cans whole kernel corn
  • 2 cans diced potatoes
  • 2 cans french style green beans
  • 2 cans sliced carrots
  • 1 46 oz can tomato juice
  • 2 lb. hamburger
  • 1 box – (2 envelopes) Lipton Onion Soup, Onion Mushroom Soup OR garlic onion soup mix
  • 2 envelopes brown gravy mix

Method:

Brown the hamburger in a 6+ qt. soup pot or dutch oven and break it up, do not drain. Stir in both envelopes of brown gravy mix and both envelopes of Lipton soup mix. Open all cans of vegetables, drain, and dump into soup pot. Add half tomato juice, half water until the pot is full. Simmer for an hour or so. Leftovers seem to taste better than the first round!
