Three Easy Dinner Recipes-Simple Shepherd’s Pie, Baked Scalloped Potatoes and Ham, Broccoli-Cheese Soup

 

Simple Shepherd’s Pie

This is a great dinner dish. Delicious and healthy for you.

Prep time 10 minutes

Total time 30 minutes

Ingredients:

1 pound of ground beef

1 cup of shredded cheddar cheese

2 cups of prepared mash potatoes

2 Tablespoons of minced garlic

4 cups of frozen mixed vegetables

Directions:

1. Heat oven to 375 degrees.

2. Brown ground beef in a large skillet and drain well.

3. Make the mash potatoes and add 1/2 cup of cheddar cheese and add garlic, stir until well blended.

4. Combine the ground beef and vegetables into a 9 inch square baking dish.

5. Cover with potato mixture and top with remaining cheddar cheese.

6. Bake for 20-30 minutes.

 

Baked Scalloped Potatoes and Ham

Prep time 30 minutes

Total time 1 hour

Makes 16 (1 cup) servings

Ingredients:

10 red potatoes cut into slices

1 (16oz) container of sour cream

1 pound of American cheese (block) cut into 1/2 inch squares

1 pound of smoked ham (chopped)

1 cup of chopped shallots (green onions)

1/2 cup of Parmesan cheese

Directions:

1. Heat oven to 350 degrees.

2. Cook potatoes in a large covered saucepan for 15 minutes.

3. Remove half of potatoes and place in a large bowl and add sour cream, mix until smooth.

4. Stir in American cheese, ham, onions, and stir in the remaining potato slices.

5. Spray a 13×9 inch baking dish with cooking spray.

6. Spoon in mixture and sprinkle top with Parmesan cheese.

7. Bake for 30-40 minutes.

 

Broccoli-Cheese Soup

A delicious recipe for St. Patrick’s Day. Perfect dish for vegetarians.

Prep time 10 minutes

Total time 30 minutes

Makes 6 (1 cup) servings

Ingredients:

2 Tablespoons of butter

1/2 cup of chopped onions

2 Tablespoons of flour

2 1/2 cups of milk

1 pound of American cheese cut into chunks

1 package of frozen chopped broccoli, thawed and drained

1/2 teaspoon of black pepper

Directions:

1. In a large saucepan, melt butter and add onion and flour and cook for about 6 minutes.

2. Stir in milk and bring to a boil, turn down heat and simmer for 1 minute.

3. Add remaining ingredients and cook until cheese is melted and soup is completely heated.
