Easy Mushroom Fettuccini
This is an easy vegetarian recipe that I often make and very much enjoy. It is also a budget saver since it is inexpensive to make and it goes a long way. This delicious dish can also be frozen in individual servings and keeps well which works well for me and others who cook for one most of the time. Here is how to make it…
Cook up noodles according to package directions. Drain and toss with
2 Tbsp. butter just before serving.
Make your mushroom fettuccini sauce
In a saucepan over medium heat with
1 Tbsp. butter
Sauté
1 small can mushroom pieces drained
1 clove garlic minced
2 Tbsp, finely chopped onion
When onion is tender reduce heat to medium low and stir in
1 10 1/2oz can condensed cream of mushroom soup
1/2 cup milk
1/4 cup light cream or half and half
1/4 tsp. fresh ground black pepper
Stir until smooth
Add
1/2 cup Parmesan/Romano cheese
Stir until hot and cheese has melted
Do not boil
Drain noodles, toss with butter and stir in sauce
Serve immediately. Garnish with a little freshly chopped parsley and serve
with a side salad and crusty bread.
