This Middle-Eastern inspired dish contains cholesterol-free hummus – a delicious, guilt-free addition to this easy-to-make meal.

PREPARATION TIME: 10 MINUTES COOKING TIME: 10 MINUTES SERVES 6

EASY/PREPAREAHEAD

30Og carton hummus

450g jar roasted red peppers,

with juices

small handful fresh coriander

Vitsp smoked paprika or freshly

ground black pepper

200g (7oz) feta cheese

Combine the hummus with twice the vcIltic У I-an с hoi wa’.c- (use ‘.he container as a measure) in a large saucepan. Chop the red peppers and add to the pan along with their juices. Add most of the coriander, reserving some for the garnish, end stir well. Bring to the boil, part-cover the pan and reduce to

a simmer for 5 minutes, or until very hot.

2 Pour the pan contents into a blender and blitz to a puree with the paprika or pepper. Return to the pan for 2 minutes to reheat. Ladle into serving dishes and add 2 finger-like slices of feta with a sprig of coriander to each. Serve hot. Alternatively, this soup can be chilled and served cold, Per serving: 241 calories, 18g fat
