Filipino Chicken Afritada (Braised Chicken in Tomato Sauce)

A famous filipino chicken dish that you can usually see on Filipino feasts and gatherings. Cook, taste, and enjoy! :)

Ingredients:

  • 1 kilo chicken, cut into pieces
  • 5 pieces medium-sized potatoes, peeled and cut in halves
  • 1 red onion, diced
  • 1 head garlic, minced
  • 1 medium-sized tomato, sliced
  • 1 green bell pepper, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 2 cups pork or chicken stock
  • 1 cup tomato sauce or 1/2 tomato paste(just add water)
  • 2 tablespoon fish sauce
  • 3 tablespoons cooking oil

Cooking Instructions:

  • Heat 3 tablespoon of cooking oil and saute garlic, onions, and tomato.
  • Add chicken and slightly brown or until almost cooked.
  • Add fish sauce and saute for couple of minutes then add stock.
  • Cover and bring to a boil. Then simmer for about 20 minutes or until cooked.
  • Add green and red bell pepper and simmer for 2 minutes.
  • Remove cover and simmer for another 15 minutes to thicken the sauce. (Add water if necessary)
  • Serve this chicken recipe hot with steamed rice.

    i can eat the onion, garlic and peppers. I don’t eat meat but I’m sure it’s very tasty.
