Fish Chowder

The main ingredient in this fish chowder recipe is cod, but it can be replaced with your favorite fish. Fish chowder contains some amazing flavors and consists of fresh chopped vegetable, herbs and sauces. That creates the prefect savory combination of tastes, that are enjoyable. This great fish chowder recipe is really easy to make and should only take about one and a half hour to prepare and cook.
Ingredients
- 3 Tablespoons Olive Oil
- 7oz Onion (Finely Chopped)
- 7oz Celery (Finely Chopped)
- 5oz Carrot (Finely Chopped)
- 14oz Canned Tomatoes (Chopped)
- 1 Teaspoon Finely Garlic (Chopped)
- 4oz Plain Flour
- 1/2 teaspoon cinnamon (Ground)
- 1/2 Teaspoon Marjoram (Dried)
- 1/2 Teaspoon Oregano (Dried)
- 4pt Fish Stock
- 7oz Cooked Boneless Cod Fillets (Flaked)
- 1fl oz Dark Rum
- 1fl oz Worcestershire Sauce
- 1 Tablespoon Tabasco Sauce
- Salt and Ground Black Pepper
Preparation
Start by heating the olive oil in a large saucepan over a medium heat. Cook the vegetables, tomatoes and garlic for about five minutes, stirring continuously. Then add the flour, cinnamon and herbs, and continue to cook for a further two minutes.
Next add the stock and bring the mixture to a boil, then crumble the fish into the pan with some rum, Worcestershire sauce and Tabasco. Simmer the mixture for about one hour, stirring occasionally. To finish, season with salt and pepper, and serve hot.
