French Bean Soup

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Onion (Chopped)
  • 2 Celery Sticks (Thinly Sliced)
  • 3 Garlic Cloves (Minced)
  • 1lb 4oz Canned Cooked Cannellini Beans (Drained)
  • 14fl oz Vegetable Stock
  • l/4fl oz White Wine
  • 3 Sprigs of Fresh Rosemary
  • 1/4 Teaspoon Ground White Pepper
  • 4oz Mozzarella Cheese (Grated)

Preparation

Start by Heating the oil in a large saucepan over a medium-high heat. Then add the onion, celery and garlic, and sweat the combination for about five minutes until it’s soft, stirring frequently. Next add the remaining ingredients except the cheese, and bring the mixture to the boil.

Finish by reducing the heat and covering the pan and let the mixture simmer for about ten to fifteen minutes. To serve french bean soup, remove and discard the rosemary sprigs and ladle the soup into warm bowls, topping each serving with a little of the mozzarella cheese.
