French Onion Soup

A very warm hearty soup.

   French Onion Soup


  • 4 1/2 tbsp Butter
  • 3 tbsp Flour
  • 2 lb Thinly sliced onions
  • 1 1/2 tsp Salt2 tbsp Vegetable oil
  • 2 Clove garlic
  • 4 pt Beef stock
  • 1 cup grated combination parmesan and Monterey jack cheese
  • 12 Slices French Bread
  • 2/3 tbsp Olive oil, or as needed


  In a sauce pan, melt butter and olive oil over medium heat. Add onions and salt, simmer, stirring in between until onions are brown. Add in flour, stirring for 3 minutes. Remove from heat. In another sauce pan add the stock, simmer, then add to onions. Simmer on low heat. Lightly covered cook on low and bring to a simmer. Add salt and pepper as needed.

Mean while preheat oven to 330%. Spread bread in one layer on baking dish, bake about 14 minute. Brush on olive oil, turn and brush on olive oil on other side. For about 10 minutes or until browned lightly. Serve in individual serving bowls. Place bread in bowls and pour in soup, Garnish with cheese.

       Makes about 6 servings
