Gluten-Free Living 5: Chicken Soup

A delicious chicken soup made from the roast chicken in Gluten Free Living – Recipe 4.

Chicken soup can be a great remedy for the common cold. It also makes a delicious meal for a large group. If you haven’t finished the Roasted Chicken recipe from this series, you need to do that first, here

I’m just going to pick up right where this one left off.

Ingredients

  • 7 cups water
  • 3 cups chicken broth (make sure it’s gluten free)
  • 2 cups frozen corn kernels
  • 1 cup frozen peas
  • 1 cup basmati rice

Method

  1. Remove breasts from chicken once it has cooled. These are better used for something else. They also make a tasty snack while you’re making soup!
  2. Break the chicken into large pieces. Basically just pull the legs off and any other large pieces so you can spread it over the bottom of the roasting pan. Add 2 cups of water and set the roasting pan across two burners on the stove. Turn both burners to medium-low heat and put the cover on the pan. Let the chicken boil lightly and steam for 45 minutes to an hour. This will loosen all the meat off the bones.
  3. Drain all the contents of the roasting pan through a fine strainer into a large pot. Let all of the chicken and bones sit in the strainer over the pot to cool. After 20 minutes or so, once the chicken is cool enough to handle, you need to go through and take all of the bones and fat out by hand. Have a bowl next to you to put meat in, and put everything in a compost or garbage bag.
  4. Once you’ve got all the unwanted material out, return the chicken to the liquid already in the pot. Add the other 5 cups of water, the chicken broth, the corn, and the peas. Note, this makes a lot of soup, so make sure your pot is big enough.
  5. Put the pot on a large burner on medium heat. Let the soup heat up to the point of bubbling. This may take upwards of 30 minutes. Stir every 5 minutes or so to make sure nothing sticks to the bottom of the pot. Once it has started bubbling, add the rice. Cover and let cook for another 20 minutes, stirring occasionally.
  6. Once the rice is cooked through, lower the heat to low and simmer for 45 minutes or an hour, stirring occasionally. If you’re really hungry you can skip this step, but the end result will be much better if you let the flavours have time to mix.

That’s it! You’ve now got a gigantic pot of chicken soup as well as a couple of chicken breasts for another meal. Here is a photo of the finished product.

    I once cooked chicken soup, it is delicious and very beneficial for health. You can also enrichen it with other vegetables like potatoes and carrots and some others if you like by adding them to the pot while boiling the chicken.

    Great recipe! It looks good and it’s healthy too. I am trying to stay away from MSG and Gluten and I am always looking for different recipes that are gluten-free. It’s hard to find soup that is so you really are better off making your own. Great job!
