Grah Na Suhom Mesu (Bean Stew with Smoked Beef)
Bean stew with smoked beef.
Ingredients:
- 400 – 500g “kidney beans”
- 2 potatoes
- 2 carrots
- 2 onions
- 4 garlic cloves
- 4 tablespoons of oil
- 3 tablespoons of flour
- 300g smoked beef
- Salt, pepper
- Vegeta (local spice)
- 2 tablespoons of Spanish paprika powder
- 50g of tomato purée
- 4 tablespoons of oil

IMPORTANT:
Soak the beans in lukewarm water during the night
Preparation:
- Wash the kidney beans and let them boil, then wash again with cold water
- Boil the smoked beef and wash it with cold water
- Take an “pressure cooker”
- Put 4 tablespoons of oil in the “pressure cooker” and add the chopped onion
- Fry the onion until it turns golden brown
- Add the smoked meat and let it fry
- Add the chopped potatoes and carrots
- Add the beans and the chopped garlic
- Finish by adding the spices and mix all well together
- Fill 3/4 of the “pressure cooker” with boiling water. Close the pot and let it cook 40 – 45 minutes
Prepare the “roux”
How to prepare the “roux”
- Take a frying pan and put 4 – 5 tablespoons of oil
- When the oil is hot put 3 tablespoons of flour and mix well
- Add 50g of tomato purée and mix again
- Pour a bit of boiling water and mix for 5 minutes
- Add this mixture to the bean stew and mix when stew almost ready
- Leave on heat for another 10 minutes
