Grah Na Suhom Mesu (Bean Stew with Smoked Beef)

Bean stew with smoked beef.

Ingredients:

  • 400 – 500g “kidney beans”
  • 2 potatoes
  • 2 carrots
  • 2 onions
  • 4 garlic cloves
  • 4 tablespoons of oil
  • 3 tablespoons of flour
  • 300g smoked beef
  • Salt, pepper
  • Vegeta (local spice)
  • 2 tablespoons of Spanish paprika powder
  • 50g of tomato purée
  • 4 tablespoons of oil

IMPORTANT:

Soak the beans in lukewarm water during the night
 
Preparation:

  • Wash the kidney beans and let them boil, then wash again with cold water
  • Boil the smoked beef and wash it with cold water
  • Take an “pressure cooker”
  • Put 4 tablespoons of oil in the “pressure cooker” and add the chopped onion
  • Fry the onion until it turns golden brown
  • Add the smoked meat and let it fry
  • Add the chopped potatoes and carrots
  • Add the beans and the chopped garlic
  • Finish by adding the spices and mix all well together
  • Fill 3/4 of the “pressure cooker” with boiling water. Close the pot and let it cook 40 – 45 minutes

Prepare the “roux”

How to prepare the “roux”

  • Take a frying pan and put 4 – 5 tablespoons of oil
  • When the oil is hot put 3 tablespoons of flour and mix well
  • Add 50g of tomato purée and mix again
  • Pour a bit of boiling water and mix for 5 minutes
  • Add this mixture to the bean stew and mix when stew almost ready
  • Leave on heat for another 10 minutes
