Greek Food:baked Fish and Vegetables (Plaki)

This is an international recipe that everybody wanted to try.Baked Fish and Vegetables are healthy and nutritious food.

Ingredients:

1/3 cup olive oil

1 and 1/2 cups chopped onions

2 cloves garlic, minced

3 cups boiling water

1 and 1/2 cup sliced celery

1 and 1/2 cups sliced carrots

3 potatoes, peeled and sliced 1 inch thick

3 tomatoes, sliced

2 and 1/2 teaspoons salt

3/4 freshly ground pepper

6 slices pike,sea bass, or salmon

3 tablespoons lemon juice

1/2 cup black olives

1/2 pound cabbage

Method:

                 Heat the oil in a casserole; saute the onions until browned. Mix in the garlic and water; bring to a boil. Add the celery, carrots, potatoes, tomatoes, 1 and 1/2 teaspoons salt, and 1/4 teaspoon paper. Cook over low heat in about 15 minutes. Season the fish with the remaining salt and pepper; arrange over the vegetables. Sprinkle with the lemom juice. Cover and bake in a 350 degrees oven in about 30 minutes. Remove cover, sprinkle with the olives and add the cabbage, bake uncovered 15 minutes longer.Serve directly to a plate or casserole.
